Fresh mint and tomato chutney

I was totally charmed by Indian chutneys already at the beginning of my journey, in Auroville. Have been preparing to write a post about the incredible chutneys of South-India ever since. And now I tasted something in the North, that I would like to share immediately.  It is not only delicious but also ideal refreshment in hot summer days. And the ingredients are available anywhere.

Ingredients:

  • 4-5  pieces of tomato
  • 4-5 pieces of red onion
  • fresh ginger
  • lots of fresh mint (a small bundle)
  • 5 pieces of fresh green chili (as per the Indian taste :-))
  • a pinch of salt
  • water as needed for desired thickness
  • a pinch of ajwain

After cleaning and cutting the ingredients into big chunks, we put everything into a blender, switch the blender on, wait for a bit and taste 🙂
